And you had £500 burning a hole in your pocket (or PayPal) account, what would you buy? It needs to be available to order and at or under budget.
I'm tempted by a Dekla Flieger, mainly inspired by the Just One More Watch review.

The Tissot Powermatic 80 Silicum looks like a great all rounder at that sort of money. RRP is £650 but I think you could probably get one close to budget by shopping around.

I'd actually re-buy a watch I already own - MWC Depthmaster automatic, with Tritium tubes:
It does so much that I want - easy to read under all light conditions, extremely tough and waterproof, rotating bezel for timing, sapphire glass, reliable and cheap-to-replace NH35 inside, drilled lugs - £435 leaves plenty for a few nice straps and a well-deserved pint
It's only fault is that it's not a chronograph, otherwise it's the most watch for the least £££ that I own.
Their blurb is all rather confusing, and those prices are simply not correct on their website (they may not be USD, but rather another currency?). Unfortunately another example of them giving out very mixed messages on the price point and branding!

Which is better, Cresticle or Parnis?
Cresticle I think is doing something actually new and interesting (double bezels, titanium, GMT) but Parnis I thought were just a maker of copies? So I'd vote Cresticle, even with the brand name.
Edit: Having now read Russ's comment, I see I swung and miss on that one. Wouldn't have got the link to the meat and two veg part with Parnis otherwise!
I gather it's possible to acquire both Cresticles and Parnises in Thailand, even when shopping for an entirely different brand...?

Any variant of the G-Shock B5000 which interested you. Various prices but most are below £500.
If you open yourself up to used I'd probably go straight for an Seiko SPB079. They're £799 new but with haggling can be had for just over £600 so I would guess within your budget at £500.
Seiko 007. The last of the line of a true classic and I literally did order not one but two today.

Funny you should say that - my local dealer recently got what he believes will be his last ever delivery of SKX's.
So a couple of weeks ago I got (another) 009 and (on impulse while I was there) an 011.
The downside is that he's fully aware that they're becoming scarcer and his prices have risen dramatically. Not quite 500, but not too far off either.
The upside was that he had a few of each and I was allowed to sort through and check for the usual issues and pick the ones I wanted.
Seiko orange monster
From what i have seen of the 3 sub £500 Hong Kong watches i have owned i would go for another.
The Turtle homage i bought the other day is nicer than the actual watch it is meant to be a homage of.
Can it be tomorrow? The alkin Model 2 release is tomorrow (30th), and it is in budget, so I would go for that.
I might add that I have opted for two Crestic watches (they have wisely dropped the Crestical moniker). One plain Ti and one in black.
I will also add that I am sincerely hoping that my money is not going to disappear, Crestic have gone into radio silence mode. I am a little worried.
But the alkin is a good looking watch.
