I had a classic yesterday . . . a fishfinger sarny. White bread, lashings of Lurpak, salt and vinegar, big mug of tea. Today at 11 I'll be having Cumberland sausages in white with Damson ketchup from The Hawhshead Relish Company, a nice lining for an afternoon of Draught Bass.

Here are some visual tips. I couldn't eat a whole one so save half to the next day. Cold it seemed even better.

Use a heavy weight to help on the grill. A brick wrapped in tin foil is an idea.

Likewise a hash brown sandwich (has to be on a white sandwich loaf) has that lovely combination of soft, doughy white bread and crunchy crispy potato. Dress with either red or brown sauce to suit personal taste and you have one cracking sandwich. Add an egg for additional protein and /or bacon for that "Royale"experience.

I offer the Scandi-style open sandwich... a slice of German dark rye bread, a slice of Norwegian Jarlserg cheese, a slice of smoked ham (Brunswick or Wiltshire) and a dollop of whole grain mustard.

A few of my favourites:
Hot bacon and egg mayo.
Egg mayo and sliced pickled beetroot.
Mashed banana and brown sugar.
Pastrami and cream cheese.
Ham and cheese melt done in the air fryer.
Ham, emmentaal, tomato and mayo.
Hot pulled pork with stuffing and apple sauce.
So clever my foot fell off.
KISS, a plain old (ripe)banana sandwich with a smear of peanut butter, lashing of butter-butter on seeded bread. Want one now.

A couple of door step slices of freshly baked bread, real butter, Stilton cheese, Spanish onion, Branston pickle with a couple of pickled onions and a fresh tomato on the side.
Salami, turkey breast, crispy streaky bacon, rocket, Parmesan, onion and truffle mayo - some back pepper in a crusty baguette.
Trust me - this is soo good.
I am picky about where I’d get a pink burger.
Studied food tech at uni, and you’re spot on with why mince can be one of the most dangerous things in a supermarket for bbq food poisoning.
I cook a burger at home to 150F so still pink, but work on a longer time at a lower temp so the meat is pasteurised and therefore safe. So there are ways around getting the doneness you want.
However you do make life more complicated for yourself vs a simple grill to 165F mantra. Damn it’s pushing 10pm and I now want a burger!
I stumbled across this sandwich whilst in Cardiff a few weeks ago. There was a deli sandwich shop called 'Fresh'. It was insanely good - the queue was long, which is always a great sign.
I made this very sandwich twice at home since and it was a knockout. My daughter said yesterday, it was epic!
