I do find on many watches the date disrupts the look, whilst on other it can add some interest.
My brain is a bit weird in that I can remember numbers very well (e.g. NI number, credit card, bank accounts, registration of my first car) but I usually forget today's date several times a day. Despite that I prefer no date watches,
except where they have a date dial (not window), which I don't think anyone has mentioned so far. I do have examples of all date, day date and no date watches though.
What's not to like?

I have date, day-date and non date watches. I like them all very much. I do get the simplicity and symmetry you get from a no date dial. But all dial versions have a place in my small collection.
I tend to prefer a no date watch. For me, when I go to my collection and want to try something different, I'm often put off by those with a date, because as well as having to reset the time from the last time it was used (and power reserve ran out), I've then got to flaff with setting the date. Yes I'm lazy ... But lazyness aside, as I like dress watches more than sports / utility watches, I think the clean / balanced dials draw me in more.

I like both, it really depends on the piece. The main reason I like no dates is that they're easier to set in a pinch!
I like both. And more often than not when I do wear my no date pieces I find myself looking at the watch for the date...

Though perhaps not typical, as someone who visits multiple countries and time zones most weeks I can tell you that both day and date sometimes come in remarkably handy.
I had a three week stretch recently where I went from Copenhagen to Kenya to the UK to Russia and back again to the UK, and then followed that with a trip to Kuwait. When you travel over weekends as well it is surprisingly easy to lose track, and being able to look up day and date on your watch can then prove oddly reassuring.
If I am somewhere for a few days then the no-date watch comes out.
I think if you lead a typical life working 5 days a week and the weekend off, then you always know what day it is but some people don't live like that and so, the exact day of the week is unimportant to them. The date even less so.
Could be worse as this tells me whether it's day or night on the left subdial... okay, may have had a reason in it's original planned usage but hopefully not for me!

I see both the pros and cons of each and have a mix. In a job which involves signing forms some of the time, it's surprising how often you find yourself double checking the date, and it's easier if you are with a client to glance at your watch rather than whip your phone out.

Recently bought this little one, but haven’t worn it yet. Still find it too small.
Two of my favourite no date watches.
Before I joined here I would have considered a date essential - now I don't think it is.

I’ve gotten used to not having a date on my 560.
Saying that I still out of habit look down now and again, but will grab my phone if I need the calendar. Day easy to remember, date not so much.
Symmetry of no dates are more pleasing. Plus a bug bear of mine is white date wheels on a black dial. Why oh why can’t makers match the dial and have the contrast on the numbers!!!

I have just purchased my first non date watch, for a special occasion, which will arrive earlier next year.
It's called a complication for a reason - nobody needs to know the day, or the date - you could agree most people don't even need to know the time. How many people need a moon phase? It's there to demonstrate the capability of the movement, the manufacturer more than it is for us to actually use.
Personally I like no date on my 'active' watches (I was lucky to get a Longines Legend Diver ND before they stopped doing them) and the symmetry is appealing, however on a smart watch I like having a date as long as there's also something else on the dial to a company it like a power reserve or sub seconds.
Love some dateless watches, love some dated watches, love some day + date watches (IWC).
Some of the day + date watches I've seen the font is too small for me now, my eyes, even with my glasses, struggle to read the day and date.
A date + a nice cyclops + a simple dial = lovely.
When I bought this watch , I was able to try on also the model with Panorama date, and the P'date with moon phase at the same time.
There was a price difference, but that was not the deciding factor. The non-complicated model just looked so elegant and, as it is of course thinner, felt slightly better on the wrist.
Normally, I am a fan of GO's big Panorama date (I have it on the PanoReserve and, hopefully as of tomorrow, will have a second example) -- but on the "Senator Excellence" it just didn't look right.
The date on this one's useless. It only goes up to 12.

Love the simplicity of no date. Unfortunately the date complication is just so useful for me that I get irritated if I constantly have to take out my phone to check the date if my watch doesn't display it, since I'm always forgetting it.

with 20+ watches, I quitted changing dates. Prefer ND's more and more
On a very clean looking dial like this Hamilton Intra-Matic of mine a date would spoil it.
However on some of these chunky diver types with script all over them I don't think a date feature detracts at all.

Date windows are the work of the Devil! Like a roof box on a Ferrari.
The only upside of having one if you don't like it, is keep in in your collection for a few years until you need reading glasses, when you won't be able to read it anyway and it'll blur into something resembling the 3 marker!

When I'm without I'm constantly looking for it! Lol

I'm surprised more makers don't set the date @6 making the dial look more balanced but I guess it would get in the way of the countless lines of script they seem to need.

I like quite uncluttered watches and so don’t have any chronograph watches but I do like the date. Personally I don’t think the addition of a date complication to a watch (if done well) detracts from good simple design.
