Istanbul
Looking for a holiday (with sun) this year Budget about 3000 for two of us.
Not bothered about beaches but needs to have interesting and historical places to visit.
We've done Italy, several Greek islands and a chunk of France.
Does the team have have any recommendations ( buying a watch is not an option).

Not a bad recommendation, I would think.
How long a hol can you get for £3,000/a couple?
A week? or will that cover 2wks?
Istanbul is a great shout . A great city to keep going back to.
I’m back there next week but only for a weekend .
I’d also recommend Andalusia. Fly to Malaga, take in Granada, Cordoba, Seville, Jerez and Cadiz. It can all be done very simply by train too so no faring with a car. It does get extremely hot though so bear that in mind and there’s no sea breezes to cool you down .
For Istanbul, I've been many times and continue to go back.
Whatever the flights cost plus say £70/night for a reasonable hotel (though I was there at Christmas and got a good one for about 50/night, don't use the big chains) plus up to £60-£100+/day for food/drink/attractions I would say.
What time of the year you going ?
This may decide where people recommend?

Rhyl was pretty sunny last year. Or was it the year before? Go to Rhyl and buy a caravan there with the change.
Check out Side near Antalya in Turkey. Lots of lovely hotels and some great ancient ruins and amphitheaters to visit, plus lots of other historical stuff to go see in a hire car or on tours.
Or Egypt.
Stay in a posh hotel in Gaza or Cairo, then get the train down to Luxor and see the valley of kings etc.
On my bucket list!
If you need inspiration for that trip, watch the channel 4 program that’s been on this month called “Ancient Egypt by train, with Alice Roberts”. It’s been very good.

Hungary and Budapest
I’m currently in Siem Reap, Cambodia. Went to see the temples at Angkor yesterday . Absolutely amazing. If you want interesting and historical this it. However You can get “temple fatigue” as you can spend a week here and still not see them all. Also been to Vietnam on this trip - Hanoi, Seppa, Halong Bay, Hoi An and Hoi Chi Minh City. Can highly recommend also.
All doable on your budget. Vietnam is particularly easy to eat out well on a shoestring budget.
Sicily is lovely- especially Taormina and Syracusa

Vietnam - might be tricky on the budget unless you do the package tour thing.
Menorca
I’d vote for Croatia or Crete.
Crete has a number of historic sites, Spinalonga, Knossos, Venetian Harbours at Rethymno and Chania and a number of forts.
Also other places like Samaria Gorge, war cemeteries etc.etc.
I'd second (or third) Croatia.
I haven't been to the capital, me and my then-girlfriend took a trip to the south and drove/jetski'd/boated all over. Beautiful islands, beaches, and the national park around there. Recommended if the kind of hands-on/immersive holiday is your thing.
I would love to holiday anywhere in the world apart from a lot of North Africa and Dubai.
