Point and laugh if you like but I know absolutely nothing about these things and I'm trying to sort out what's what. The ones I think I like look to be a sort of gunmetal grey, and the images I've seen of these seem to mostly have them on a canvas-looking strap; not keen on the fully black DLC-coated ones, nor the shiny ones.
So what is it I like? Is the Evo Night Mission, or is that the black one? Or is the Evo Night Mission sometimes black and sometimes gunmetal/brushed. Or are the bushed and gunmetal watches different watches that just look the same in some images to me?
Et cetera. All very confusing to a bear of little brain like me who's only owned one Breitling and that was a 1960s vintage thing.

I know even less, and have owned even fewer, than you, but I think the gunmetal look you are referring to is because they are in titanium.
Think I'm getting there, tell me if I've got this right:
All of them are titanium.
40mm wtches were the gens one and two. Then they went to 42mm and this is known as "Advantage"?
Then they went to 43mm, were dubbed Evo, and in the middle of this was a limited edition called Night Mission which was a dark grey, not a black DLC.
Today you can have an Evo in blue dial, black dial or a full DLC job, but that DLC watch isn't a Night Mission.
Have I got it?
I briefly had one, but found the hands a bit small for the watch if that makes sense. I know they're a forum favourite though. Same with that B55 on SC at the moment - huge watch with small blue hands - looks a bit err Jeremy Beadle IYKWIM.
The Night Mission is PVD applied Titanium Oxide over Titanium I think. It is an Evo, so 43mm
Whatever it is, this was mine, and it wore spectacularly. I still miss it.

Another link you may find useful if you haven't come across it already.
Here’s mine. A keeper for me. So light and comfortable. Doesn’t wear anything like a 43mm
They do come up on SC every so often circa 2k

This is the 42mm Avantage version.
Ti case same across the range, but various dial colour options.
All 22mm lugs and on the Pro2 bracelet (maybe Pro3 on the later versions, just pre-Evo?)
I changed mine to a newer Breitling canvas, as do not get on with the bracelet
And the earlier 40mm here. Again bracelet only, but 20mm lugs. Same drills with dial options/colours but one standard Ti case

Cheers. Lovely pieces. I just can't get on with them on a bracelet I think - just too much metal for me - but they all seem to look great on the fabric. I suspect that's why I like the images of the NM watches I've seen. They seem to photograph very inconsistently; I've seen watches advertised as Night Mission that look like they have normal titanium cases, and ones which are very PVD/DLC looking. Were he NM cases actually coated?
They are, as it is possible to scratch through to the underlying metal. They are impossible to refinish, and Breitling won’t discount the full service that would ordinarily include a case and bracelet refinish. The normal uncoated titanium aerospace is more logical to buy, but there is something very cool about the NM. Sometimes the heart wants what the heart wants….

Just a quick thank you to everyone for helping me on this. Access to collective wisdom beyond one's own is one of the (many) joys of this place.
Think I've come to the view that the one for me is a 42mm Avantage as a result of this thread.
I don't think I've ever seen a 'shiny' Aerospace.
You may have seen photos of the (superior ) B-1, which was stainless steel and highly polished.
