Top quality / special hotel recommendations

Hi all got a week off end of august
And me and my mrs are lucky enough to be child free for a week
Good old grandparents helping out.
I’d like to book a weeks holiday in Europe at a
Holiday resort with a nice beach and A few decent bars / restaurants
Don’t mind splashing out a bit. Any ideas on top quality hotels that you can recommend in a nice resort
No more than 45 min transfer from the airport and around a 3h max flight. So the canaries and cypress are a no go
