Talk to me about ham stands

Much to my Wife's horror, and a little to mine if I'm being honest, a Spanish friend of ours is bringing me back what appears to be quite a large leg of ham from Spain as a Christmas gift. Apparently it was an offer too good to be missed, he's already sent me a picture of his Dad holding it and it looks about the size of our 6 year old Daughter!

After announcing that he back on Monday he's just sent me the following message that has quickened the blood somewhat:-

"Get hold of a ham stand and knife!!!

    Any recommendations?

I threw 2 out before Xmas as we bought a ham that came with one.
I tend to go for the wooden stands easy to put together and take apart when needed.
Amazon have a few no need to spend big money.
Re knife - long thin flexible blade needed. I bought a relatively cheap knife and keep it super sharp.

    https://www.amazon.co.uk/Steelblade®...s%2C599&sr=8-7

Something like this would do I am sure. If you are like us it only comes out at Xmas.

You might want to hold off ordering the stand until the ham has cleared UK Customs :-)

He seems quite confident that it won't be an issue

I should think you could make one quite easily, nice oiled plank of wood and some nails / spikes through the bottom. I expect shop bought ones might not be big enough for a whole leg?
    Cheers..

    Not if from Spain.
Most supermarkets sell the Jamón but you do not tend to see the stands with them.

The proper jamoneria will probably sell stands, as will the bigger supermercados - but not normally as a set of Jamón plus stand.
(In Spain they assume you already own a stand!)

We have 2 legs of pata negra de bellota a year at least, as my Mrs is from Andalucía and mad on the stuff.

I will take a photo of our stand, but was just a cheap Amazon one as mentioned above. Works a treat.
The size of leg versus stand is not usually an issue, as you put the ankle in, not the thigh end!

You do need a proper long flexible jamón knife or you will just wreck it and not enjoy the meat. The thinner you cut it, the tastier!
It is defo a skill though…

Found some piccies of the last leg…

I think the knife is made by Arcos, we may have bought it here from Amazon, worth a search.

You can see how simple the stand is. The eyed screw has a point and you just wind it into any bit of ankle that fits the gap.

We also have a dedicated jamón cloth to cover it.

I have about £10,000 to spend on a ham stand and was wondering if Rolex made any? I do realise my budget would only get me a basic model and I would likely have to be on a waiting list for a few years.

If my Mrs knew I had put a photo out into the public domain of her horrible old dressing gown, I would be on the wrong end of that long thin knife!!!

    If it’s a leg you won’t need a stand…. it’ll stand up by itself.
