I need to have a couple of watches valued for my insurance - one in particular has increased a lot in the last 18 months! Anyone know somewhere I could use to get some accurate and insurance-safe valuations?

Not vintage. A stainless 5980 Patek, couple of modern Rolexes and an AP Royal Oak.

Ok, pretty straightforward then.
Ask your insurance company who they would accept for a valuation.
They will have a list ie;
watchmaker who is member of ***
Auction houses
Etc
Saves you paying twice.
Whoever you use will need to know what they’re doing and not quote a retail price.
As a ballpark insurance valuations will be 1.5 to 2 x what you might sell for on here. The assumption is you will replace stolen watch from a retail bricks and mortar shop, possibly in London as that’s where most shops are, hence the high valuation.
The 5980 will be £150k or more, will your insurance company insure that?
Talk to them.
I use Sothebys for my valuations.
