Garage flooring - block paving protection?

We have moved to a property that has a continuation of the block paved driveway to create the flooring of what was once a double car port and is now a fully enclosed double garage. I'm not really interested in lifting all these and pouring a concrete slab because a) the ground isn't level and has a 10cm drop from one side to the other and b) I don't want to spend the money when I have stuff indoors that needs fixing first! I do however want to turn one side into a gym / workshop area and therefore want to lay interlocking foam tiles down over the gym area and at least some sort of rubber sheet or dot penny rubber flooring over the workshop area to stop spills going straight into the soakaway underneath the pavers.

Is this as simple as just ordering enough rubber flooring to cover one side of the garage and then putting my interlocking mats over the gym area? Would I need a DPM underneath this as well (seemed like a sensible choice as it'd only cost me about an extra £15 for the sheeting)?

That’s what I did.
No issues with my (somewhat smaller) garage. My flooring was concrete, so in your case with block paving I would probably look at a simple DPM sheet before putting the rubber floor down.
