After last Saturdays charity walk we have a ton of bananas left in the office so thinking I should play catch up and make some loaf and wondered if anyone has any go to recipes.

I would add that the Weight Watchers recipe I have used; although I further reduce sugar by 1/3 and up the sultanas by 1/3, is great and freezes really well in slices, you can take it out the freezer in the morning and it is defrosted by lunchtime. Sure this will work with any recipe.

We had a load of bananas going brown and spotty a few weeks ago. So we mashed them up, threw in chopped dates, pecan nuts, couple of eggs, big spoon of butter, small cup of sr flour and a bit of sweetener. It made a nice sloppy mess that we put in a greaseproofed loaf tin for about 30mins at 200.
Just keep checking and cooking until a knife comes out clean. Really nice by itself or bit o' butter on.

I always freeze bananas Brie making banana bread. Take them out 10-20 mins before needed, and mash them into the mix by hand. Perfect banana bread
It's just a matter of time...
I use this - there is a tremendous amount of guff before the recipe itself is given, but it works very well. Buttermilk is key I think.

I don’t often bother with the frosting, but if I do, I halve the quantities.
