You've got a spare £70,000 you won't miss.
Is it the incredibly rare GMT Master or the lovely 996 GT3?
They will both probably appreciate in value but which will give the most pleasure?
Or you could bet the money again and maybe have both.

GT3 as it is so well sorted and will give you more memories than watch.

I’m in a not dissimilar situation and though I love cars I’d struggle to have £70k tied up in a car - even a GT3 (as an aside assume you mean a 996 GT3? There was no GT3 for the 993 generation).
This view is even more true for a watch!
I’d probably split it half on a tasty car and the other half on ... several somethings else!
This dilemma has been similar to mine (new car though) and personally I get far more enjoyment out of watches. I had some big holiday cancelled last year (my 50th) and I’ve spent the money on watches. My 3 year lease is up in 6 months and right now I’d buy more watches than put the money into a car. That may well change when things return to normal but I’d say buy the watch :-)
Most on a car and the rest covering the cost of a driving holiday around Europe taking in one or two circuits, mountain passes, wine regions and coastal roads.
Retire sooner.

Values of each will probably track up together over time, so not exactly throwing money away. The GT3 will cost a lot more to own.
Having said that, car every time for me - especially if it has tropical dials...
Pay off the mortgages on my house and buy to let flat and buy a BB58.
I have faced the ‘car or watch’ dilemma twice - although not at this price point.
Picked watch both times.
