I’m biased, I had the same dilemma and went for the white gold variant in the middle. If I didn’t have a RG PP 5980r on strap I would have been tempted to go for RG but I’m still very pleased with my choice.
Yellow Gold, Black Dial
White Gold, Steel & Black Dial
Everose Gold, Chocolate Dial
I like the white faced ceramic Daytona, but they are impossible to get. Compared to the previous I really like the black / cerachrom bezel so I’ve had a look for alternatives.
Steel / impossible to get :
However, with the steel being impossible to get, and assuming I was rich enough to afford one, which of the below alternatives do you prefer and why? I’m going to try and make this into a poll but my IT skills are rather limited....
Yellow gold, black dial :
White gold, steel and black dial :
Everose gold, chocolate and black dial :
I prefer watches on a bracelet but, apart from impossible to get steel, there doesn’t seem to be a way to have a Daytona with the black bezel on a bracelet.

RG slightly ahead of the WG
YG just not for me at all I’m afraid,
I'd always get it with metal bracelet. Other than that I like looks of the black dial/yellow gold version.
White gold looks amazing

No “none of the above” option!
If you like the white dial ceramic steel one, just buy that. You gotta look at it every day and if you can afford the gold ones you can afford the white steel. The grey market premium seems to hold so if you pay £22k its still less than the gold and you get the one you really wanted.
This one.

I love it, if I needed to go down to one watch it could easily be this one. As a combination the black ceramic works well with oysterflex and the black subdials, I think it really modernises the Daytona and in some ways looks quite low key.
The wings on the oyster flex take a little while to settle, I did find them a bit itchy to begin with but now don’t really notice them and find it very comfortable.
I would still like a white dial Daytona at some point but I think they are different enough to co-exist in a collection. I just couldn’t bring myself to pay so much of a premium over retail.
White gold and steel. I don’t see other option instead of the “impossible’

Steel, easy to live with
At least you didn't include the brown and blue monstrosity...

Breitling Cosmonaute 809 - What's not to like?
Of the gold options, the white gold just looks great...and closest to the steel you crave. Perhaps you can fit a bracelet on it?
Yellow gold PN dial. White gold is nice but too common
Are they all readily available ?

For my money, the white gold Daytona on oysterflex is one of the most stunning watches Rolex makes. If I had the means that is absolutely the one I would go for.
