Recently sold my great Sinn 556i. Loved it, but was just a smidge too small for me.
I have a budget of around £550 ish could go a bit more.
Don't really want Quartz, so Auto / Manual wind.
I have found the sweet spot appears to be approx. 42mm without crown.
Something that can take knocks and WR to 200M would be awesome.
No Seiko or PRS please as they aren't for me

Any of the Seiko MM200 variants. Great blue hole is prob out of reach but is the pick of the litter. I have the SPB079 but managed to get an OEM bracelet for it. Best of both worlds.
The logical suggestion would be a used 856 as it's very similar in appearance to the 556 but a little larger at 40mm. Would stretch your budget though.
With my Zeno hat on, Id recommend a Zeno Pro-Diver.

Zeno's a good shout - massive range at amazingly good prices, one of the most underappreciated brands out there IME.
Dekla's "Turbulenz" range includes a 42mm option with a variety of dial styles, print colours and second hands - if you option-in their hardened "6-Steel" Pro option, the price does at least include lube and a reacharound when it stretches your budget to £595:

Anyway, just food for thought for the OP as he said he liked everything about the 556 but the size.
Not knocking the watches, they're bloody excellent, but thought doubling-up the budget was a bit more than just a stretch! That said, were it me, I'd wait a bit longer and save a bit more to get something of that quality rather than compromise.
Hamilton make some nice watches in that price bracket

Good shout, got one of those as well, they are nicely made. I have the MK2 version, with the non PCL's, I think they have gone back to PCL's and a ceramic bezel now which is a bit more blingy.
