As a single watch probably a tudor vintage sub, like 9411, snowflake blue or something. Or one of the older model speedys. Strapmonsters both of them..
If you had £7k-15k to spend on one watch and it cannot be a Rolex, what would you buy? (no other criteria).

AP Royal Oak offshore diver. Lovely watch. Could you get a ceramic bezel for this money?
Assuming retail an Aquanaut. If market price possibly a VC Overseas 4500v or a Panerai of some sort.
Get on the list for the new Ed White 321 Speedmaster.
Speedy 321.
In fact, how much is GO Seventies panorama date?
BP FF - wide choice of strap/bracelet, material, dial colour etc.
The new Master Control Chronograph Calendar by Jaeger LeCoultre - the only watch I could see turning me into a one-watch guy.
AP without doubt.
A triple date moonphase of some description, JLC do a rather nice one as do (did) Blancpain.
An 18k Moser Perpetual 🤣
It can be done, going by WF buying in price LOL
Actually maybe the Blancpain Kash has just put on SC. Beautiful.
Hi-Beat Grand Seiko of some kind but not one with a wonky date!
Failing that I would have a Heuer Autavia 1163 GMT S1,with the 1-24 markers on the bezel or an Autavia Siffert Mk2.
"A man of little significance"
As I have my diver, weekend watch & quartz beater. The watch I’d go for is the GO Panomaticlunar - Silver dial with bracelet.
Leaving money aside for a calibre 11 blue Monaco.
But if your only 1 watch then either AP Diver or BBFF or Moser Sport. Tick enough boxes to cater for all scenarios & great movements IMHO

A JLC 8 day perpetual calendar just like the one on sc
Blancpain FF barakuda or AP offshore diver white dial with navy rubber.
My Speedy Ed White with Rare Decimeter bezel instead of usual DO90
JLC Reverso
This one
Omega Aqua Terra and keep the change!
Bronzo all the way!!!

If only I had got that much to spend right now!
If the one watch wasn’t the only watch, I’d be looking at vintage and as I’m a big Tudor fan, it would likely be either a sub or a big block. Or possibly both if we stretched the one watch thing to just one budget instead.

Head says "something Rolexy to go in the safe"...
Heart says the best XXII I could find -
A Jaeger-LeCoultre Polaris, understated class.

I cannot recommend this highly enough, with a discount of course.
PS Need to moisturise.

Kash recently sold a VC overseas 4500 for around 14.5k if I recall correctly. RRP is now 19k plus. If you could get one of those for that money that would be my choice. I’ve got one and it’s the best watch I’ve ever had.
For £15k, easy choice if it sits well on your wrist: Octo Finissimo Chrono/GMT.
Think it’d have to be another shout here for a Blancpain FF of some iteration, the bezels and dials look stunning.
Maybe because it’s a strange answer. The OP is asking for advice on buying watches between 7k and 15k so logic tells me that he wants to know about watches in those price ranges. Logic also tells me that he knows what a bank account does and that he’s not looking for advice on that or £100 watches. My best guess is that your post was an attempt at humour?

Panerai brownzo if you can get one at retail.

I'm quite satisfied with the collection now but one watch I have always wanted is a 16760 full set with original dial/handset of course.
A Gold GO PanoReserve is on my hit list.
Another couple of £K and I might just about get a Duometre.
