Can someone explain why these two watched have such a big price difference?
I get they look different but essentially seems the same watch?
And what exactly are the "three sub dials" on the blue faced version?

Not a stupid question.
The simple answer is quality of movement, case finishing and bracelet.
It would be interesting to have each in hand to see if the £550 difference is noticeable.
All I can say is I notice a big difference between my Seiko skx (£150) and my sbdx (£1500) but these examples you've given will not be as far apart.
The cheaper one has the 4R35 movement and Hardlex glass.
The other has the 6R35 ( i think) movement and Sapphire crystal.
That's two reason's for price difference.

Everything that everyone has said above plus: The Sumo is simply overpriced at £999 (not unusual for UK B&M stores when it comes to Seikos) whereas the Samurai at £449 is also overpriced but not as badly as the Sumo. A Sumo should cost more than a Samurai but not almost twice the price.

The watch in the first link isn't a Sumo, it's a 'Marinemaster 200' SBDC061

I did something ghastly involving a vintage Seiko 5...
Not sure where you get the "marinemaster 200" part of the name, its simply the SBDC061, part of the prospex line of divers.
To the OP, as to why the 061 is more expensive than the samurai, physically the movement is superior, the 6r15 has a 50 hour reserve, the 4r36 is about a 40 hour reserve.
The 061 also has a higher level of polishing and finishing, the samurai is the same brushed finish all over.
The 061 also has the "diashield" coating which improves the ability of the watch to resist scratches.
I have handled neither, but i assume the 061 will have a better bracelet. Cheaper seikos usually have bracelets that are "fine", but not amazing by any stretch.
Then theres marketing, who just decided to place the 061 higher up in the pecking order than the samurai due to its taking styling elements from classic seiko divers i guess.
Have a Google, it is wider referred to everywhere as the MM200 or Baby MM. Great watches but I prefer the blue bezel on rubber. Didn't see the value in the bracelet and didn't like the black bezel.
Added a pic with its big brother. There is also a Pepsi version which looks lovely and even a ltd edition Toppers Jeweler's one.
Yes, I'm fully aware of that and I certainly didn't just make up the nickname.
Seiko have a 'cult' following on the internet forums and enthusiasts come up with nicknames for models such as Tuna, Sumo, Turtle, Samurai etc
You even mentioned a Samurai yourself in reply to the OP.
As wileeeeeey pointed out, the SBDC061 and the SBDC063 with blue bezel in his photo are known widely as a Baby Marinemaster or Marinemaster 200.
I had a Marinemaster 200 with blue bezel and like you said, it is a step up from the Sumos, Turtles and Samurais that I've also owned.
