I say probably because I’ve never owned one but I can see myself consolidating the collection around it down the line.

Seadwellers are big old lumps. I'd go with an Omega seamaster professional 300m 2561.80. All the WR you ever need, looks good, cheaper, very comfortable bracelet. Plus you can pretend to be James Bond.

Probably a G shock. Nearly indestructable, 200m WR, cheap and quartz, so precise.
Rolex is way to overpriced to feature in any best watch list.

I can’t even decide which is best amongst my own collection, far too subjective a question to try and answer objectively!
If there was a category for ‘best watch in its era’ I’d nominate the Omega Seamasters from the 1950s.
Now we've got the most cliched and whimsical choices out of the way, lets cut to the chase, the fact is that when we are talking about watches that are meant to, you know, tell the time, accuracy, stability and robustness are key criteria. The moment you introduce those into whatever calculus of criteria you are applying, then I'm sorry, but it has to be a quartz.
But not just any quartz. All the other criteria about aesthetics and even historical significance all still count and so it's got to be one that scores highly there. Start with the movement. Scoring highly on history you have stuff like the GP 352 and other early quartz. Personally I think Seiko have a strong contender in the 7A28/38 - it's got legendary military connections with the V force as well as more general RAF usage, It's got impeccable movie credentials in Aliens for a start. It's good looking, indestructible and can time accurately to 1/10th of a second. That's a strong contender right there:

I'd certainly go for a 14060m two-liner, but the SD holds no appeal for me at all, whatever prices may or may not do.
That will be the case with every "best watch ever" - many will love them, but many others will be indifferent to their charms!

The other day someone was talking about the new Citizen 0100 solar module... if you set the watch at your birth, it will be less than 2 minutes out by the time you die.
I find that scary and rather have an old mechanical Poljot.
Incredibly easy to pick a Rolex, but the winner has to be a G shock, I am surprised that nobody has mentioned a Seiko SKX, surely a contender.

Robustness
Elegance
Value
Appreciation / depreciation
However you measure it people will disagree anyway based on their opinion.
So overall surely the question should be what the best watch ever to you.

G-shock gw-m5610
is close to the perfect instrument, always correct, multiple time zones, stop watch, comfortable to wear, solar battery, suitable for any event (many consider the slim profile & austere looks as smart/tidy).
My favourite watch, however, is deffo not a g-shock.

I don't like G-Shocks and would never wear one, but I was with you until that last point (I looked to see if this was a G-Shock I'd never seen before, but no, it's a big FW91 like most of the others).
People can and will wear any watch they like whenever they like, but a G-Shock like that looks as out of place with a suit or Dinner Jacket as a baseball cap worn backwards, whatever its many other qualities.

I have one and it is. However, the alarm is inexplicably weak and the pushers are a little too recessed. The humble F91-W outscores the m5610 on both fronts. If Casio fixed these issues then I think it would be faultless.
It's top heavy (height to surface area is too big) and sits badly on the wrist. Too small for a genuine diver, legibility is only average and the lume, by modern standards, very poor. Otherwise I quite enjoyed mine.
