For me I'd sell the U1, you'll be able to replace in the future easily enough if you wish.
So, I've found myself with 5 nice watches having promised my wife to keep the collection to 4. The collection consists of the following and I need to move one on
Speedy

Sinn U1
Sinn 857 UTC
Blue Pelagos
The speedy was an engagement gift from my wife and my first proper watch so that has to stay. The Pelagos is the latest purchase and I'm keeping that. So it comes down to the 2254 and the two Sinns. For a long time the 2254 was my daily wearer and it's slightly fallen out of favour (was considering trading for a black bay GMT), however, it's possibly a future classic so I think it's staying. So it's between the U1 and 857 and I just can't make my mind up
Thought I'd settled on keeping the U1 but every time I think I've made my mind up I then have an urge to sell the U1 and keep the 857 - help me decide?

Tough call, but given that neither watch could be classified as 'rare' I suspect it all comes down to which dial you find the most visually appealing. The U1 edges it for me, here - the pop of red makes it that bit more appealing and gives it longer term interest. You'll kick yourself either way, of course.

You have the dive/tool watches covered with the Pelagos and the 2254 so I'd say lose the U1, although I'd be tempted to sell the 857 as well, then buy a GMT of some description.
Maybe look at a watch without a bezel like a Sinn 144 or the GMT version
Or something a bit dressier? A Grand Seiko maybe?
I'd be inclined to sell U1 and 857 and get down to 3, then see how you feel after a few weeks.
