I believe you can, but only if you save it as a search in your AT account first. Then access it from your 'saved searches' and you should have the sort option that you are looking for.
No idea why it is not an option without taking this round the houses route.

If you save the search options (ie, make, model, colour etc) then you can order by listing age. The option doesn’t seem to appear for non-saved searches.
Think they call it 'most recent'. To avoid confusion such as in previous posts.
