Which religion?

The wife and I have decided to take a holiday in the Holy Lands sometime between October 2019 and October 2020. We are totally flexible.
None of our social circle have been out there so I was hoping if anyone here can give some advice on the best time to go. We will avoid the main religious dates such as Easter for obvious reasons.
Viking seem to do a reasonable cruise and we could stay on afterwards and do something freelance. Generally speaking, because we are retired, we tend to do a 3 week break.
Also are there any places not to bother with.

Holly lands ? Avoid Christmas , big red is a bit busy then .
My current reading will explain all.
Whilst the climate varies depending on whereabouts you are in the Holy Land, if you don't like high temperatures then avoid late June through to end August. Recommended places to visit are numerous, of course many have religious connotations. Some with less religious overtones and which I've enjoyed are Acre, Haifa, Ramon Crater and of course the Dead Sea, particularly Masada and Ein Gedi.
