For me it would probably be a stainless steel Rolex datejust, quite simple, but appropriate for most things.

Always annoys me a little when I see 'WR' to xxx. Basically the company is saying it'll resist water to whatever depth but it's not actually waterproof to that depth. In other words, 'well only a bit of water got in so it resisted it quite well and therefore you've got to pay for a repair'.

Do you have any technical basis for posting crap like this?......if so please share! How many watches have you taken apart?.......do you understand how watches seal (and sometimes don’t)?
In my experience, if a watch is in good condition the water resistence exceeds the stated figure, that’s based on actually testing watches, not conjecture!
Unless you insist on swimming in a watch, water resistence is unlikely to be a problem and shouldn’t be a criteria for for choice.

Rolex GMT BLNR for me. Has all the functionality I'm likely to need, it's tough, waterproof, and it can be worn with a suit if needed.
Datejust with plain bezel. It does what it says on the tin.

A good choice, which must fit your requirements for 'the one'.
Think of it like the choice of person you marry though, you get one choice, you make that choice without a full and detailed knowledge of what your buying into, and you'd better hope it's the correct or things will end up very expensive.
I look at it this way:
A chap can only wear one piece of 'jewelery' and since we all either have a suit and tie on or mufty clothes for work, that piece of jewelery says an awful lot to people about what you are. The style, brand, design etc and how other people perceive them are therefore important.
You want it to still look good in 20+ years time (snigger, bit life the wife). Rolex datejust fits the bill, as does the Speedmaster and some left of field watches like the Cartier tank. So choosing something that is not the current must have fashion is equally important.
You want it to be well engineered and built so it'll last and still work to specification in 20+ years. (snigger, no saggy bottoms please).
You want it to be something that you are not just happy to put on every day for those next 20+ years, but that you love to put on, take pride in and are absolutely certain that you'll be handing on to your son as and when the time comes.
Those are my requirements. Mickey mouse watch might be 'it' for some people as might an all black Hublot, but as we're all individuals I wouldn't ever dispute their choice. I might snigger to myself though.

Omega SMPc chronograph 2599.80.00. This watch was excellent over 20 years ago and is still excellent doing it's thing in all situations.
If I could have only one I would be keeping this one.
(I would post a picture but it is a pain having to re-size each time, too much of a faff. No other site I use has this issue, shame.)

Good question. I’d have to be able to take it diving, and would need something that ticked the following boxes:
- Automatic
- 20atm WR
- 120 click unidirectional bezel
- No date
- Uncluttered and easy to read
- Sapphire crystal
- Not too expensive
…which reinforces my suspicion that I need to start saving my pennies for one of these:
