There are many....
AC/DC - Livewire
Always hits the spot.

I'm not really a fan of long drawn out solos TBH, too proggy for my money, but here's some shorter ones I love.
Jimi - All along the watchtower, but pretty much anything by him.
Steve Jones (Sex Pistols) - God Save the Queen.
Gary Quackenbush (SRC) - Eye of the Storm.
I've posted a vid of the last one as I doubt many people have heard of it - sublime playing throughout.
Cheers,
Neil.
"Black Dog": Led Zeppelin is another one I loved in my early teens.
Lindsey Buckingham is amazing live. I've stood this close to him playing solos on 4 occasions and every one has been electric. It's especially good when you get to hit his guitar during the solo.
Thanks guys, I know what I'm doing tonight.
Great thread!
More or less my whole iTunes list! Stevie Ray Vaughan was mentioned already but this one is not on iTunes, only on YT: SRV in 1986 sound check
Some real classics already mentioned.
Another...For Love Of God - Steve Vai
Maybe not to everyone's taste but technically I find it pretty impressive.
Nils Lofgren does a long solo in 'girl in motion' if you can find it. A much underrated player.
I was going to post the above myself, one of my favourites by Nils.
Excellent indeed. Of course there's really no " best guitar solo" , just lots of great ones, but having seen a lot of great guitarists in over 40 years of concerts including Nils a good few times, he's up there with the best.

Some great suggestions here!
Some of my fave's as well.....
And some more from John Frusciante (RHCP)

When you look long into an abyss, the abyss looks long into you.........

Riviera Paradise, just brilliant.
Daddel.
Got a new watch, divers watch it is, had to drown the bastard to get it!
There's much more to a guitar solo than speeding up and down a guitar neck, passion, emotion, musicality...... whatever, ably demonstrated by Mick Ronson, as mentioned earlier,.......

Wembley 85 -Dire Straits-Tunnel Of Love
End of the song Knopfler at his very best and anyone not playing air guitar by the end of it has no soul.
So many great ones mentioned already.
This one's not too bad either.
Lovely understated guitar throughout and a great solo.

Joe Satriani - All Alone
and for the blues fans...
Robin Trower (with the legendary Jack Bruce) - Lives of Clay

Check out Captain Speedy Fingers - Alvin Lee and Ten Years After.
Their Live Recording LP is mega 😀

A bit shreddy (to say the least), but Shawn Lane (RIP) could also play with tremendous feeling, 6 minutes into this song he gets a bit crazy....

I find Meshuggah's guitarist - Frederick Thordendal's work interesting, he doesn't play the usual blues scale solos, he's influenced by Jazz guitarist Alan Holdsworth. I find it a perfect fit for Meshuggah's noisy, jagged staccato music:
https://www.youtube.com/watch?v=f1hmI4eqzps
The solo starts around 5 minutes into this song.
You can certainly hear the Allan Holdsworth influence there. I fear that Meshuggah might be a bit much for some of the delicate souls here though. Talking of Allan Holdsworth, here's a perfect example of his playing.

Yeah, I watched that youtube video too

Can't be quantified and music being art it is subjective.
My favourite also changes depending on mood and style of music I feel like listening to at the time.
Too add to the excellent suggestions already I offer
Joe Bonamassa - India / Mountain time
https://www.youtube.com/watch?v=jrIRo3fG9xg
Marillion - Easter
https://www.youtube.com/watch?v=jd0nSN90Hgk
Steve Rothery is a much under-rated genius to my mind.
Rush - La Villa Strangiato
https://www.youtube.com/watch?v=eK1hmDpa8bo
Santana - Europa
https://www.youtube.com/watch?v=TCAeDIF2svc
and Samba Pa Ti
https://www.youtube.com/watch?v=DWO_eojWezg
You might argue the Santana tracks aren't solos in the conventional sense. They are however truly beautiful pieces of guitar playing.

Can't help it, I must mention Angus Young - simply because he's a local. (Angus and his wife live a few miles to the east). I have never met him in person, just seen him walk by or riding his bike. His wife is a lot taller than he is, that's what draws the attention. Not the fact that a skinny guy in his early 60 rides a bike.

Guthrie Govan. Regret#9
My favourite guitar solo though is from someone who is often compared with David Gilmour and Steve Rothery (indeed I've heard they all have mutual respect for each other) and that's Andy Latimer of Camel. In fact if I could take only one piece of music to my desert island it would be 'Ice' by Camel. Even now, having listened to it hundreds of times, there is a bit from about 5 minutes onwards as it builds to a crescendo which still gives me goosebumps every time.
Forgot the great John McLaughlin especially with Shaktism

I prefer solos that have a beginning middle and end, and tend to be well integrated into the song they are in. The Ritchie Blackmore solo in 'Can't Happen Here' (Rainbow) is a great example, but players such as Brian May (Lazing On A Sunday Afternoon from Night At The Opera) and Jimi Hendrix (Hey Joe) have many examples.
I thought i had an answer for this thread, but I am sitting saying
'oh thats good...thats good..thats good'
Prince gets my vote on this one, closely followed by
Jimi Hendrix - All along the watch tower.
Eric Clapton - Layla
Brian May - Bohemian Rhapsody
And this...I like this version and the solo.

There's not really a thing as best guitar solo, but there's been some crackers on here. The SRV warmup posted early is just about the best video of him.
I found this my accident the other day https://www.youtube.com/watch?v=mzRbeHyIomk - Tom Morello playing with Bruce Springsteen. He does a couple of solos, but the second on at 6.20 or so is a wondrous sonic experience. Tom sure knows how to get a lot of different sounds from his guitar and can play a bit too.
This has to be the best G&D thread yet, thanks to all of you.
Bit left field, but love Marc Ribot on Jockey Full of Bourboun by Tom Waits, latterly covered by Joe Bonnamassa :
http://youtu.be/IgMP9O-cIV8
Also the late great Robert Quine, seminal New York alt guitar dude, played with Richard Hell, Lou Reed, latterly with guys like Matthew Sweet and Lloyd Cole - 2:13 on this:

^That Prince clip is just... magisterial.
