I’m not sure in the majority of cases you can do this. Modern Rolex have random serial numbers, so no collectors database to check against, just the date of sale on the warranty card if you are lucky. Even back in the day, you could check a serial number to confirm year of manufacture, but a lot of those older watches won’t be full sets, so no paperwork and even if it was a full set it may have sat in the AD for several years before being sold, so the year of manufacture and year of sale won’t match.
As stated, better to just buy from a reputable source and keep away from anything which seems like a bargain.
On vintage Rolex, I have used the serial number to establish that the dial etc is correct for the particular watch.
