Exceptions of environments include: extreme sports, or heavy-duty hands-on work environments where only something like a G-shock would cope.
So what would your £500 all-rounder be?

Hamilton Khaki Auto is a fine choice, but I would try and squeeze a Damasko DA36 into budget if possible, second hand of course. A nice leather strap would dress it up, black Nato fir more casual and every-day wear. Lovely.
That might be a bit of a challenge, so I'd certainly be glad to fall back to a Hamilton Khaki.

A nice cheap used Omega SMP300 - I have seen Autos this year for £500 - alternatively a nice Quartz could be had with a lot of looking.
One of Eddie's PRS3's - a lot of watch and comes with change - but may be a little too diver.
So if an Omega SMP doesn't come in under budget then there is only one do it all watch for me for under £500 at the minute and that is the Precista Speedbird GMT - looks great, 100m, anti-magnetic, ect etc. - oh and even has a GMT hand so I can keep an eye on the time in Australia.
It's just a matter of time...

Worth looking up Kemmner as well - just search the forum for info. Higher up the food chain the Seiko Sumo would be an excellent choice, as would a good condition used Oris TT1

Actually it was £599, but I sold the bracelet on eBay for £234 after subtraction of fees. I already have a 2254 and a 2531.... so I have the bracelet covered elsewhere.
Then put it on a custom Hirsch leather strap and it's pretty much good for all occasions!

But, if I was buying second hand I would say Jean Richard all the time, their watches are just such good quality and the design is solid and everything feels 'right'. I'm pretty drawn to the Omega SMP Quartz 2264 myself. I think in this price bracket and given the OP's scenario, there's a lot to be said for quartz which tends to keep the values down whilst allowing some interesting models.
Of my current selection, 4 out of 5 would fit within that price range - CWC G10, Casio GW-2500, Seiko SBCM023 and Revue Thommen Airspeed Classic Quartz Chrono. I had one of the latter as my main (ie, the only one I actually used) for 10 years, and found it made a great combination for sport (robust, 10 mm thickness, centre sweep chrono); business (low profile, ti, very readable at a glance during a meeting); or travel (quick-set hour hand). I've just bought another one and am sending it back to the factory for refurbishment, but even allowing for the cost of that I'd expect it to come within the specified £500.
Think mine would be something like:
Mondaine Retro Auto (getting this soon, but can't decide white or black)
Steinhart Ocean 1 Black
I've also been lusting after a specific Invicta tonight (9937OB) - with Swiss movement/Sapphire, but it appears to be discontinued.
And I quite like the Halios Bluering that's tempting me on the Sales corner.
I also very much like my Orient 60th Anniversary Ltd white faced dress watch, but that was nowhere near £500!
I have a Seamaster Pro (Blue), but I like the idea of a good, yet cheaper alternate. Why, I don't know - because I can probably!
Why only 1 watch?
For the money I'd get a Seiko SBC023M (the HEQ quartz) although this would have to be preowned.
A G shock or 3. The Gulfman would be top of that list.
That'll still leave enough over for a nice dress watch as seen on a thread here a couple days ago.

I would go for the CWC chronograph with date for 475 quid. Nice Valjoux 7765 movement, pretty rugged design but works remarkably well with a suit if you change the NATO strap to a black one. Looks rather italian, sprezzatura you know:)
