Springsteen's "Thunder Road" covered by Tortoise and Bonnie "Prince" Billie - turns a brilliant song into an astonishing song.
Highly recommended listening, esp if you like the Boss.

Not that radically different but the Blue Aeroplanes version of "boy in the bubble" outshone Paul Simons for me. The Meteors "Johnny remember me" is a helluva track as well.

I've seen a few fantastic cover versions at various gigs. Some which stand out:

Deacon Blue - Like a Prayer

Deacon Blue - Better the Devil You Know

Deacon Blue - Light of Day

Billy Joel - Back in the USSR

Wasn''t there but wish I was - got the DVD - Springsteen - London Calling

Johnny Cash did a lot of covers in his last 5 albums, but "Hurt" stands out really well.

I don't know if whole set of Pink Floyd songs by Mostly Autumn qualify as a cover, but they did a really great job on their album "Pink Floyd Revisited".

The ultimate cover, surely? Aretha Franklin's 'Respect':

    http://www.youtube.com/watch?v=cSdFTVhFyyc

A cover of Otis Reading's song:

    http://www.youtube.com/watch?v=Qo3aeXZFZkg

I love both versions, but Aretha made it that bit more special.

While am it, Otis's version of 'Satisfaction' is pretty good too.

Bizarrely, this tune is on the latest Galaxy chocolate ad.

Thought of another one, Bitches Ain't Sh*t by Ben Folds Five. It's a Snoop Dog song, to the tune of Yellow (I think!) by Coldplay. No really, it's superb. NSFW though

    I'm a NIN fan!!!

You're right JC's version is the better song.

Then again Cash's recent/final cover versions are generally pretty good quality, the version he does of Nick Cave's Mercy Seat is something pretty special.

My favourite cover though is Carter USM's version of the Pet Shop Boy's song Rent.

Some favourites off the top of my head...

Johnny Cash - Hurt (surely the best cover of them all)
Laura Cantrell - The Whiskey Makes You Sweeter
    Gorky's Zygotic Mynci - O Caroline
Nick Cave & The Bad Seeds - Wanted Man
Ween - If I Close My Eyes Forever
The Sisters of Mercy - both Emma and Jolene were such odd but enjoyable covers live
