Never got to a decent temperature with wood. Grate where wood goes warped, doesn’t fit properly - just general poor quality.
Bought a gas burner for it which is forever cutting out.
You’re certainly getting excellent results. Sorely tempted to get one to replace my Ooni which has never really been up to much.
Only problem is storage as no room to have it permanently on the...
Can always use the juice for somethin else (or even concentrate separately and recombine with rest).
Never found San Marzano very different to others TBH.
Hopefully I'm incorrect but suspect they're geared up for larger orders from caterers and could be more - let us know!

How about a rice equivalent of semolina on the peel - maybe grind some rice down to a very coarse flour?

It might but as I said, my burner cuts out after a few minutes with the door. You might be lucky if the vents/chimney are set differently. Obviously this is the pizza door, not the glass one.

No, the pizza door can be used. Just checked the user manual. Might not make much difference but hoped might get a bit hotter with it.
