Gas would be my preference. I haven’t used wood since getting the gas burner and find we use the oven way more since switching to gas too.

That’s exactly how I do my garlic bread too (except for covering it with the peel).

I’m guessing a stone/ceramic oven similar to what Gozney have brought out.
If you check for the normal ooni 3 on the Homebase website at a local store there is a good chance they will have the pro too (mine was like that anyway).

I’ve knocked up a batch of Pitch’s dough and I’m going to prove it in the fridge until Saturday. Photos incoming at some point!
I haven’t actually used it yet but should hopefully have it fired up in the next couple of weeks.
I should hopefully be able to contribute more this year. I added a gas burner to the Uuni which should make balcony cooking a bit more convenient.
