So far it's done what I want (and expected) without fuss or drama. I've used it mainly for steaks and it also cooked pork tenderloin perfectly. I'll have a go with some vegetables this weekend.
...
I got a cheap kit which included the vacuum sealer. Didn't want to spend a lot in case I didn't get on with it. I'll be cooking a nice bit of fillet steak today.
Eddie
Yes, long and slow and then browned off in the pan. Steak is tender and juicy, same with chicken and pork. I'm going to get some brisket and make some corned beef next but that will be a 10 day...
I bought a sous vide cooker the other week. So far, so good.

I've made this and can confirm that it's excellent. Most surprised that garlic & herbs aren't in the recipe.
Eddie
I don['t think I could eat a whole one.

I got some brisket to do this at the weekend, at least I think it's brisket.

I watched Rick Stein make this on TV this week and he was so enthusiastic about it, I decided to make it this weekend.
You can download the recipe from Rick's site -...
Not really a recipe because it's rarely made the same way twice but here's a chicken curry I've just made with lentils, potatoes and lots of onions. This will be a milder curry but I'll have some...
My nephew's recipe for fajitas. I haven't tried them but he swears they're amazing.
Drizzle Olive Oil into warm frying pan.
Finely chop up chicken breast and bacon and put into the pan to...
How did it go Eddie.... thought about doing both Lamb and Chicken versions but not got round to it. My worry with the slow cook method is that Chicken could be overdone.
Done it the slow...
I was going to do the camel one this afternoon but the butcher let me down so I'm going with the Beef Madras at the beginning of this thread again. I've made it 4 times now and always tweak it...
For anyone who hasn't tried the curry recipe on page 11 of this thread, I can recommend it. You can see my earlier efforts on page 13 and I'll be making some more this week.
Eddie
I can assure you, you're never going to reach 50 posts  .

I overfilled the shaker initially Ralphy and it didn't do much. I emptied some out and shook the seeds in two batches, it seems like the ceramic ball likes a lot of free space to do its stuff. ...
Today's the day I finally got around to making the slow cook curry featured earlier in this thread. It took several visits to local Asian shops to assemble all the ingredients, I decided to start...
My local shop didn't have any ghee, so I used half sunflower oil / half unsalted butter instead.
I went to an Asian supermarket yesterday and I could have got the ghee then but there was...
Only got the ghee to get now and then I'm all set for making the slow cook beef madras. I'll see about taking lots of pictures throughout.
Eddie
That sounds an interesting curry Jon and I'll definitely be giving it a try, thanks for posting.

It's raining quite hard in Bradford this morning, but even so I'm going to have to travel some to get me a 1Kg octo-beastie!
I was also wondering where I could find one in Sheffield. ...
I've got some harissa now and will try it out with this recipe for chickpea soup.

Has anyone used Harissa paste? I quite fancy using some to make chickpea soup but if it's too hot, my wife won't eat it.
Eddie
I'm going to give that risotto a go Franco, thanks for posting.
