I've been making a lot of it. Used for breakfast toast and tea snack. I'm down to less than 15 minutes to make.
+ 600g flour. (I use what's in. Last batch was 200g strong white, 200g v strong wholemeal, 200g spelt. At least 400g should be strong or v strong)
+ 1.5 teaspoon fast action yeast
+ 1 teaspoon salt
+ 3 tablespoons milk powder
- mix
+ 200g fruit (raisons, or whatever)
- mix
+ approx 430ml water
+ 1 or so tablespoons maple syrup
- mix thoroughly
- using spatula, divide between 2 1lb silicone bread pans, and smooth out a bit
- put bread pans on a baking sheet right next to each other, cover with thin silicone baking sheet
- let sit overnight (will double in size)
- in the morning, bake at 200C (fan) for 40 minutes, leaving silicone baking sheet on top
- let cool with silicone baking sheet on top (to keep soft)
No sticking to bread pan, easy to clean, very little work
