Vegetarian restaurants offer a carnivore option?

No. Any restaurant is mostly required to have vegetarian options. Including pizzerias.
The reverse is not true.
If you wanted to answer the question seriously youd have to say that they just dont seek those customers. By doing so they accept they will also lose vegetarian customers whose party include meat eaters as all other restaurants will accommodate both food styles.
But I dont think Ben was expecting a serious answer.

One thing I can assure you as a non meat eater is that its always a big issue from meat eaters! Personally I just avoid meat and with no option remove it from a dish or go hungry. Not too difficult.
If I am eating out I wouldnt chose Hawksmoor, Beast, or Goodmans and demand no meat. I know what they specialise in and its not what I seek.

Mostly was not to state a legal but a commercial requirement (I am not sure many laws accept to be followed most of the time)
No veggie dishes will result not only in direct lost of customer but often a SM campaign and bad reviews about non-customers rating down the restaurant because they could eat there -even if they live in a different county.

I went to an all veggie in Edinburgh and it was because of the owners, husband and wife and Im sure religion had to do with it.
Went to one in Neasden which is affiliated to Neasden Temple and that obviously was religion.
Either way in both cases it was some of the best food Ive had but there again I am a veggie
Not really many of them. Is the Gate still going in Hammersmith. Had a great meal there a lifetime ago.

Any decent restaurant or chef should be able to make good dishes that are good in their own right whether or not they have meat in them . I love a good bit of meat bit I equally love eating dishes that are entirely vegetarian or vegan . I've never understood the need to make such a song and dance about it. Good food is good food. If I went to a place that had meat in everything I'd question whether the chef was any good.
Quorn makes me ill , ( Im not sure how I know this but the soy smell and flavour remonds me of winalot dog meal) If I need to do a curry for vegetarians I stick with lentils for a nice dal , potatoes and spinach , some Rajma with kidney beans , cauliflower fornice allo gabi adracki , chana masala with chickpeas . makes me hungry thinking about it , curry is one of the best things to make fully veggie. I do love a good butter chicken or rogan josh , fish curry with smoked haddock orveven an abroath smokey or two is lovely though. brocolli roasted in an oven for 6 mins with some garam masala and a little oil is a great fast treat also .
Its all about cross contamination!
