I'm afraid that I don't know the answer, there certainly appear to be many examples of both variations out there.
But I'm really here to say that if you ever get bored of it please do give me a shout
I took this pic for the “show your red seconds” thread and have noticed that not all of these have a red seconds hand, some have a white seconds hand matching the other hands on the watch.
Did they come with both, was one original and one a replacement and if so, which colour is original to the watch.
Cheers,
Ben

I don't have an answer to your question, but I do know some of the orange tipped Omega hands (SMP) turn white when they age / in the light.
Perhaps that is a factor here?
Not sure about the seconds hand, I would have said white but I'm not sure where the red one would have come from if not as another option.
There are two dials too, the other one has raised indices.
My old example
I think your distinction between raised/printed indices and second hand colour might be right Ben.
Cheers,
Gary
