Have you tried just to switch off, should reboot to original settings.

I don’t know how I did this but have the numbers from the keyboard appear on screen and want then gone.
Any ideas how I did this and how to get rid of them?

It will be some weird swipe thing I expect.

Go to Settings/General/Keyboards and see what options you have. Delete the ones that you don’t need.
The old ”turn it off and on” did the trick.
No idea how I did it though
Never seen that before, very strange. Prefer the previous iOS where side by side apps was a lot easier.
