Knowing that we have a number of culinary experts on the forum, there must be some gelataios amongst us?
My new ice cream machine arrived last week, follow me on my learning curve.
In order to learn the basics, I thought I start with a classical recipe with egg and cream.
I cooked some cream and milk
At the same time, I mixed two eggs with sugar and started heating it in a bain-marie.
I let the milk/cream cool down a bit and then carefully mixed it with the warm egg.
Carefully heated the mix further in the bain-marie until it started thickening (around 80 degrees, if you don't pay attentioon and let it come up to 85 degrees you have an omelet). Then I switched off the heat and strained the liquid into a bowl.
Next I melted some very dark chocolate and mixed it into the cream/egg mass, then carefully folded some mascarpone into the mix.
While I let it cool down in the fridge, I crushed some frozen raspberries.
And the it all went into the ice cream maker.
For the rest of the story, you'll have to wait a bit.

Bought the daughter a basic machine recently, she's been busy researching and tomorrow we are having our first go.
Haven't a clue where we will get half the ingredients on her list in our village but nevermind.

Wow! That’s impressive. never used an ice-cream maker. I thought you just bunged in all the ingredients in, flicked a switch and left it to do it’s business? Clearly I was mistaken
