I can't recommend a specific hotel but if you're looking for short(ish) flight, in winter for a beach holiday then best bet would be the Canaries.
The wife and I have our 10th wedding anniversary coming up in October, and we have decided that a little break sans kids would be nice.
We have only just returned from a 3 week family holiday in Thailand so cash is a bit tighter than I would like.
We would like a beach break, so somewhere warm, but not long haul as it's only for a week.
Budget wise about £500 PP (half board a minimum requirement) and preferably adults only.
Any recommendations?

I agree with the Canaries, I don't do a lot of beech holidays but Tenerife was the best I have done.

Having recently had a week in Playa Blanca, Lanzerote the beach takes some beating:
H10 Sentido White Suites Boutique Hotel, is adult only, just about within budget and very close to the beach.
We had a fantastic week in Gran Canaria just before xmas. Stayed in a resort called Meloneras which is more upmarket than most resorts (Patek AD and a couple of Rolex)I'd say and is along from Maspalomas.
Hotels there are all lovely, think we paid about £600 each but There may be some slightly less.
Canaries I would say
Try booking seperate flight and accommodation it should be cheaper that way
I stopped at lanis in lanzarote may be over budget but was adults only and ultimate luxury
That looks the business but it's way over my budget unfortunately.
Have a look at one of the Lopesan properties in Maspalomas, Gran Canaria - we stayed at the Baobab last Feb and really enjoyed it. It's cheaper than the two on the seafront (due to being set back a street), but our Garden View room had a view over the dunes and to the sea due to being on a higher floor.
