Explorer 214270 for me. It's almost the default choice.

Patek 5035P.
Been using mine as my daily wearer. Looks like dogshit with pittings here and there. Undergoing its first service after 11 years of usage
I'm tempted to say Rolex Pepsi GMTII 16710, as it does everything I need and I already have one.
But my heart says Patek 5712, as I'd never get tired of looking at it, front and back...
I've tried the complicated-horlogerie thing, but I like a reliably waterproof watch with a robust movement, and I have too much respect for Rolex's engineering savvy to really want anything else as an only watch.
The 16710 has always been a favourite, but lately I've been having thoughts of selling a few steel models and getting the classic 36 mm Day-Date in platinum. Pt950 gets rid of the poor wear resistance of 18K, and it's an understated watch that can truly be worn anywhere.
The Daytona's extremely nice in platinum, too. I've been tempted, but it's perhaps a bit flashy to be the mythical 'onewatch' for me.
It certainly is a wonderful thing!

Would have to be a black exp 2. Looks great with jeans and tshirt but can also pop under a cuff for formal occasions

40mm Rolex sub. I'll make do with the Ginault ocean rover till my fairy godmother becomes real....

Three years later...
Agree , it would have to be the sub C , date for me . It’s timeless , versatile and the perfect all round watch , suit and tie , jeans and t shirt , beach . Anywhere anytime watch

For me it would be the Rolex Explorer. Tough enough to be worn for action, smart enough to be dressed up, but looks equally good with casual clothing. The design is a classic, goes with any strap, the watch itself has great history and there's also the Rolex brand heritage and guarantee of quality.
I have had and sold a lot of watches, I think the 116610/710 takes a lot of beating as the do everything go any where watch and would be my pick

40mm Day Date in white gold, stick numerals, silver dial. Failing that, a 41mm Datejust , plain steel bezel, with Jubilee bracelet. Both classy yet robust.
At still less cost, a standard Speedy Pro on a leather strap,
I think I could "tough out" the rest of my life wearing one of these:
I have sold everything and kept the Submariner about four years ago.
I do like an ap ro, but thats currently to expensive. Maybe one day. :)
Having only one watch is the perfect (and perhaps the only) excuse for a PC.
I'd have to go with @learningtofly . . . . . .
Seiko Sumo Zimbe Edition.
Perfection and not a boring ‘me too’ watch. When I tire of this I’ll have tired of life

A Rolex GMT with a Pepsi Bezel.
SD4K 116600. Without a doubt.
Picking from my own collection, it would be my SD4K 116600.
If I could have any watch, it would be a Rolex GMT Pepsi.
I’ll go for my current grail: Rolex 14060M. The perfect all rounder, in the perfect size.
If I had to pick from my current collection, I’d go for the Sinn T2 - a very special watch.

Boring choice but it would be my sub date... so versitile.

Patek 5726 on rubber strap it comes with, comfortable, classy, a little complicated and you can swim with it!
Have to confess I don't know what most of these watch model numbers are referring to.
For me it would be a watch I already own - Zenith Class Sport El Primero handwind, legendary movement for a great manufacture, super slim, 100m WR, perhaps a bit busy as a dress watch, but when you have only one watch you have to make some compromises, other than that suitable for any occasion. I'd happily have this as my only watch.
Still firmly my choice if it was one watch, and you can pick one up for under 3k.

I think it could be the Tudor BB58, cannot wait to get it. There won’t be a shortage but I am first on the list at the local Rolex AD.

never tire of grinning
I could live with just my blue Sky-Dweller.

One of these would be nice:

Of the watches I have, I think my 16710 but if I were to buy one, it would be the 39mm Explorer.
116660 Blue, the size makes it my top watch. As much as I like (and want) a sub, a gmt & a Daytona... I find the D Blue the most satisfying to look at.

A Submariner, Explorer 1 or an SMP. Trouble is one day I'm on the mood for one thing the next another!
The one I currently wear most is BLNR, not sure how I’ll feel when the Pepsi arrives later in the year.
If it was one to be guaranteed to see out my days it would be the SD4K. #bulletproof

Bit of a left field choice for me but its the new VC overseas with its included three straps. Super versatile. Hoping they'll depreciate like a stone like the last model so i can get hold of one.

Hypothetical? The dial and.hands of the prs- 29a with everything else from the seiko sbgw001.
My previous answer was that I’d take a Patek 5712 if cost were no option.
After further consideration I can categorically say I’d stick with the Pepsi GMTII. I consider myself extremely fortunate to already own one:
That said, if I could find a matte dial 16660 SeaDweller, I could potentially be swayed (pic from Internet, sadly not my own):
At the moment, this is my favourite. Beautifully made, quite elegant, and unusual.
I don't think I could ever settle on a Rolex as my 'one watch.' Just too many of them about to be 'special.' Although I might take a different view tomorrow.

Agree that Rolex aren’t that “special” (with many notable exceptions )
For some reason however, I can’t shake the association of “one watch for the rest of your life” with “best watch for being stranded on a desert island”.
Presumably that’s just wishful thinking on my part (hell is other people etc), but it changes the criteria significantly
PP Aquanaut with both strap and bracket.
