    The ceviches I've had in Ecuador have been exclusively raw fish in citrus juice. Strange!

    Ceviches in Ecuador are often made using lightly cooked shrimp etc after a cholera outbreak in the 1990s. The seafood is then marinated in lime juice with red onion etc etc.

    Good info, thanks! Nevertheless, 3 visits to the country, they've always been raw fish. And marvellous as well.

    yep, those 'sharing' wholenuts from Dairy Milk, that include the 're-sealable' packaging always make me laugh, but with a muhuhahah type of slant, why the flumps would I ever want to 're-seal' - anything LOL.
