To complement the 'Things you hate on a watch' thread that's been running for a while, let's show some love! For me:
A splash of colour on the dial, such as a red tipped seconds hand
Applied (rather than printed) indices
Blue (rather than green) lume
A mix of brushed and polished finishes on the case and bracelet
A (slightly) tapering bracelet or strap
A date wheel the same colour as the dial
I expect that many of these features might be disliked by others...

Legibility! As I get older I find this is a big factor for me.
Otherwise your list is pretty good and I would go with most of your points.

Bright lume, I have a couple of nice watches that suffer from very faint lume
Applied, rather than painted / printed logos
Titanium is the main one for me
Ceramic bezels
Good lume
Minimum servicing
Micro adjustment on bracelet
Sea-Dweller
Submariner 2000
In Red, or
A.Lange & Sohne
on the dial :)
Half-links (in lieu of micro adjustments)

The word -Rolex on the dial 😄
A decent size crown. Some are way too small and fiddly.
A printed dial (no applied indices to fall off or tarnish).
Heat blued hands.
Reasonable (<42mm) size.
Onion crowns if they compliment the case.
Manual winding movements if the watch is not a diver.
Chronograph function if the watch is not a diver.
Symmetry.
Tempered blue hands and/ or screws.
Domed plastic crystals.
Matte dials.
A nicely brushed case.
Interesting hands, ie Cathedral.
The Mechanical Pointer Date (around the outside of the dial such as found on certain Oris Big Crown).
I don't generally monitor my performance by the second, minute or hour and where I need to I rely on quartz. But I am drawn to this slow beat analogue representation of the passage of one month. It gives an instantaneous positional grid reference, and its useful too, as a visual cue reminder for cyclical monthly routines. It is calibrated to measure the passage of time on a more meaningful human scale.
Ultimately day and date.But date will suffice.
A really good contrast between hands and face so that I can tell the time at a glance.

Something to fiddle with/look at/admire. Display back, bezel, chronograph.

A decent power reserve for calendar watches. My 7 Day IWC has never run down which is fantastic.
A watch has got to be very nice indeed for me to forgive it not having a date.
Patina....and some colour even if its really subtle.
Crisp simple dial
large heavy case (44mm and above preferably)
if it has a bracelet, i like it to have screwed links
if it has leather, i like it to have a folding deployant
Water and shockproof with durable finishes. Ideally it should stay looking as new no matter how I choose to abuse it.
I do like cool blue lume.
Bit of weight and depth, like it to sit high in wrist
Not off the high street, like it to be unique even if a popular brand
Robust so I don't to worry about knocks and bumps and can get in with enjoying the piece
Ohhh and blue hands, love that on a marine and will need to be my next purchase

I love the 'warmth' of an acrylic crystal though I only have one watch with one (a Speedy Moonwatch).

- Obscure Gay Frères bracelets
some of these are watch dependant, but if they could get combined i'd be happy
limited color palette (a splash to be interesting, but not too much to be overpowering)
legible dial without too much extra fluff (sub-dials/tachymeters/worldtime, or an essay of printed text)
matte dial
bright lume, unless its a tritium dial.
printed rather than applied indicies
dual time (rather than GMT, like the PP 5990, stealth extra hour hand is a nice feature)
a good sounding mechanical alarm (memovox)
Hands, crown and case shape, with this order, are the first I notice in a watch and the things I like the most.

Sapphire crystal with NR coating. I love that on my IWC, it really compliments the ultra legible dial.
