Thanks again for all your input. I'm leaning towards the Norfolk route, but I will have to persuade my wife. If we choose Dover-Cornwall I'll take your advice and plan an extra stop halfway there.

Haha, that's what I was thinking! My thoughts so far:
- I'll stick to the travel schedule I outlined in my first post, probably with the addition of a first stop in the New Forest/Jurassic Coast....
